Have you often admired these gorgeous tarts on Instagram and Pinterest made into anything from hearts, numbers, and monograms? Instagram accounts like Adi Kinghofer’s are so inspiring to see what beauty you can bring to pastry! These tarts are real show stoppers and believe it or not, are not nearly as difficult as you might think. Let me guide you through the steps to making pastry perfection!

- Step 1 Create your template by either buying stencils here or making them on your Cricut Explore Air 2. If you’re making your own stencils, you can easily make them in Cricut Design Space. Simply design your own numbers by clicking on the Text tool on the left side of your toolbar. Cut out your design on thick cardstock to make a rigid stencil.
- Step 2 Make your tart dough using this recipe. I found that slowly adding the flour was helpful so that the dough was not too dry. I did not add all of the flour to the recipe (probably left out about 1/4 cup of the flour or so). I did not find the need to refrigerate the dough before it was rolled out. Roll out your dough on a silpat or parchment paper to prevent sticking. You can use your stencil to cut out your flour using a clean exacto knife. You will need two sets of the pastry numbers. In this case, I made two sets of the number 40. Bake your tarts on your silpat, and let them cool completely.
- Step 3 Make your filling by using the recipe from the Trendy Cream Tarts post or Chef Iso’s recipe. I strongly suggest using a high-quality white chocolate like Callebaut because white chocolate has a tendency to seize (this means it may not be smooth enough). Fill your piping bag (here is my favorite piping bag) with your filling, and pipe out small circles using a piping tip Wilton number 7 tip.
Fill the entire tart with circles.
Layer the second layer of pastry on top of the filling.
Pipe the second layer of filling on top of your second layer of pastry.
Step 4 Garnish your tart! Here is the fun part where you get to pick all your toppings!
I choose to use macarons, strawberries, cherries, raspberries, mini pink meringues, pink spray roses, and jumbo candy heart sprinkles. Buy or make your own macarons. If you’re not sure how to make macarons, check out baking classes online here. It’s striking when you stick with a color scheme like this one of pinks and reds. Be careful when picking your flowers to make sure they were not treated with chemicals that you’ll then put on your tart. It’s best to use flowers that are meant to be edible. You can find edible flowers online or at stores such as Whole Foods.
